Bircher Muesli

My favourite breakfast at the moment is bircher muesli.  It's healthy, high in calcium and fibre, and can be made days in advance. 

I usually double the recipe below and it last me about a week - it's great on work mornings when I have to eat quickly and rush out the door.

Kate's Bircher Muesli

500ml plain, unsweetened yogurt
1 cup rolled oats
1 tbsp honey (or to taste)
2 apples, grated, with the skin left on
handful of nuts (I use raw almonds)
handful of dried fruit (I use sultanas)

Combine all ingredients in a covered dish and refrigerate overnight.

Serving suggestions:  Top with stewed fruit or fresh fruit such as banana slices or berries.  Drizzle with a little extra honey.

This quantity serves 4 people.
